Cheesy Fish Gratin with Sweet Potato & Celeriac Mash

This cheesy fish gratin contains cod, like many fish, it is a good source of omega-3 fatty acid, an essential fat that the body can't produce on its own. Fish high in Omega 3 that you can include in your gratin are Salmon, Sardine, Mackerel, Cod, Lake trout, Canned, light tuna.

Fish Gratin Ingredients

600g Mixed Fish of your choice (Cod, Salmon, Haddock, Prawns)

100g Sweetcorn

200g Blanched Broccoli Florets

350ml Whole Milk (milk of your choice)

100g Frozen Spinach

50g Butter,

3 tbsp Plain Flour

200g Mature Cheddar, grated

1/2 tsp Mustard (optional)

10g White breadcrumbs

20g Parmesan Cheese

Sweet Potato and Celeriac Mash Ingredients

300g Sweet Potato, diced

300g Celeriac, diced

150g Potato, diced

100g Carrot, sliced

50g Butter

Method

Put the raw fish, sweet corn and blanched broccoli in your ovenproof dish.

To make the sauce add the butter to a pan and melt over low heat, add the flour and stir until a paste.

Gradually whisk in the milk until you have a thick sauce. Simmer for 3-4 minutes, stirring.

Then stir in the mustard and cheese, add the frozen spinach and cook until mixed through. Pour the sauce over the fish.

Sprinkle over the breadcrumbs and finely grated parmesan.

Heat the oven to 220C/fan 200C/gas 7. Bake for 15-20, until golden topping, check fish is cooked.

Air Fryer, cook for 175oC, 16-20 minutes, until golden topping, check fish is cooked.

For the mash add the diced potato, celeriac, sweet potato and carrot to hot water and simmer for 15-20. When soft, drain and add butter and mash.
