Ingredients

500ml Bone Broth (chicken, beef) - home made or try Freja

1 boneless, skinless chicken breast (or fish )

1 tsp chopped fresh ginger

1 garlic clove, finely chopped

1/2 tsp Chinese 5 spice

50g dried soba noodles or noodles of your choice

2 tbsp sweetcorn, canned or frozen

5-6 baby sweetcorn, chopped

2-3 mushrooms, thinly sliced

Handful edamame beans

150g kale, chopped

2 tsp soy sauce, plus extra for serving

1 tbsp sesame oil

10g fresh chopped coriander

Toping

1/2 tsp nori seaweed flakes (optional)

1/2 tbsp sesame seeds

 Method

Pour the bone broth into a pan and add the chicken thigh, Chinese 5 spice, ginger and garlic. Bring to the boil, then reduce the heat, partly cover and simmer for 20 mins, until the chicken is tender.

You could put the chicken on a board and shred into bite-size pieces using a couple of forks or serve whole. Return the chicken to the stock with the noodles, baby corn, mushrooms, edamame beans, sesame oil and soy sauce. Simmer for 3-4 mins until the noodles are tender. Add the kale at the end

Ladle into two bowls and scatter over the coriander leaves sesame seeds & nori, if using. Serve with extra soy sauce.
